While I’m on the subject, here are some amazing photos from my friend Kathryn’s recent trip to Chicago’s reigning king of high concept cocktails, The Aviary. I’m normally a bit suspicious of “molecular” stuff when it comes to drinks, but if anyone can pull it off in a non-gimmicky way it’s Grant Achatz and company. I’m particularly keen to try their “In the Rocks“—basically an inside out Old Fashioned where the whiskey is injected into an ice ball.
